Headphones don't seem to reconnect, unless I remove the device and add it back again.

Uncommented the following line, and changed false to true:
FastConnectable = true
This might provide more out of the box granular control.

sudo apt-get install bluemanIt's now available in applications as "Bluetooth Manager", you will need to Adapter, Preferences, "Always Visible" to keep it showing.
It keeps an audio profile for the various settings.
